Patty folks justice here with another episode of Texas whiskey talk, the voice of the Texas whiskey experience. I'm joined by my cohost, the wave justice. I feel like I'm in school again right now. That's, that's, that's what we're doing today. We're going to school cause we're going to take these people on this Texas whiskey experience. And , uh , we're aspiring whiskey geeks, but , uh, I find it frustrating. I watched some of these reviews that people do and they, like, they sit there and they, they knows their bourbon for a few seconds and then they'll sit there and talk for about five minutes about all the flavors and aromas that they are eliciting from the glass. And they'll go on and on. And I'm just like, really? How are we doing that? You know, I get a few things when I nose nose a bourbon, but , uh,

Speaker 3:

I get baseball back bat and a piano keys.

Speaker 2:

So, so anyways , so, so we're here, you know, we've got some aspiring whiskey geeks out there in the Texas whiskey nation. So what's a, we can't afford to go to moonshine university and few, few grand short on that one. But you know, I was like, what other resources are available? W we could sell some of this whiskey and probably go probably, but I figured what other resources are out there to train your nose to train your pallet and you know, two things popped up. Um, and these are, you can see them here in front of us. We have some nosing kits. Yours is from aroma Academy.

Speaker 3:

I have the aroma Academy. Bourbon aroma kit. Yeah , this is a a , it's an interesting box. It's got about, it's got 24 different aromas in it. Um, what's some examples of a realm as you guys , you know, it's , it's everything from sweaty feet to no waste that's not in here. Um, I've got Apple Brown spices that goes into pecans and raisins and tobaccos and wheats and nuts. So the interesting thing it's got, it's got your main grains for bourbon. It's got your corn, wheat and rye in there, but then it's got all these other flavors. Um, it's, the book is pretty handy. It kinda gives you the, how to do it, how to use it. It's got notes on all of the different , uh, aromas that you're going to smell. So that's kinda neat. Like butter and leather.

Speaker 2:

The smell or knows doesn't smell that you Gabby , a little more sophisticated here.

Speaker 3:

Yeah, I smell , um, other people knows , I guess, but it's , uh , sometimes I even stink , uh , it, but even it gets into, you know , some bourbon questions at the end to help train yourself , um, specifically about like what bourbon is. It's this kind of a quiz for yourself so you can start talking smart about bourbon. Okay. Um , so that's kind of a , it's, it's a neat little book. It's not long. It's how many total pages essences or we have 24 nosing, aromas, nosing around as the kid itself is a $150. Okay. Um , and it comes with the book and the 24 things and a bunch of pixie sticks or swizzle sticks or what are the ways that you put it in here?

Speaker 2:

Okay. All right. What have you got? So I found this other resource and it was through moonshine university. They run the program. And this is the, let me get the official name here. This is from stave and thief society and this is to become a certified bourbon or it's part of their bourbon steward program and get the kid in. And guess what, guess who makes it? Aroma Academy. The same people that make your kit . So bottles look a lot of luck, but it's , it's, it's different. It's a , your kit is straight up. How to, you know, do the, the nosing, this kit, well it , it has different, it has different aromas in it, the than yours. So does your kid have corn? It does, it has, it has, it has, well they have these uncommon aromas. Um, so they have all the basics, corn, rye, wheat and malt. But they also have all of the things you don't want in your bourbon. So they got the acetones, methanol, ethyl acetate, you know, so butyl alcohol, you know, lighter, fluid, butane type stuff. So, so it has all the off flavors that you don't want or off essences that you don't want to be. You're smelling in your bourbon, your kids just straight up gangsters. It is pretty much pretty much. And then then it has all the common stuff, which is similar to your kit. Earthy Oak, vanilla. Okay . Banana. Oh , I haven't run into a lot of bananas yet with the whiskey world, but we'll see. Um, but it's got a whole list of 'em there. So if the whole thing with mine, so this card comes through with it and it just talks about how to, how to use the kit, how to use the pixie sticks, as you said. I'm pretty sure that's not the official , uh , term there. A paper strip would be the official term, but it shows you how to use the kit. And then, and then what else it's got, I bought this separately. So that kit, it came with all the, came with all the, the vials there. I'll show you real goals earlier . Well, there's 32 different aromas plus the four grains. So 36, 36 total. Yeah, that's man, you're like an engineer or something. Right . Okay. And then I got the paper strips in there and it came with this little card and that was $250. Wow. So little more expensive than your kit. Um, but, and then I also got this crafty book here. I've got the, this is the bourbon whiskey stewards manual here. And that was another is the handbook. Bourbon stewards handbook, 60 bucks. And essentially this is a certification program. And, and this whole program is sponsored by the Kentucky distillers association. I'm pretty sure. So this book is like, got tons of great information about whiskey, about the process, about ingredients. Um, so it's bourbon for dummies. Oh, it is. And it's, it's beautiful. Beautiful book. Anatomy of a label on a, on a whiskey bottle. Well, this is all bourbon. So obviously there is a Kentucky thing, but um, we got nothing against Kentucky bourbons . No, we don't. No, Nope. So was too , but it's got everything about aging , um, mingling. Uh, it's got some of the history of bourbon, some milestones, and then, and then it just talks about hospitality and the bourbon culture. I mean, they want you to be , uh , you're basically becoming a bourbon ambassador and you read all this stuff, you study up and there's some sort of online test and then you are a certified bourbon stewards. It sounds almost like a level one Psalm in the wine world where you're , you're , you know enough to be dangerous to pick out good wines with your friends in that world. In this case it's whiskeys, right? And then if you go to there , you go to the site, you can actually go to Kentucky and they have these classes. It's like an all day event and it's , um, they do the same thing. I think you're operating some distillery equipment. You're there walking you through this nosing kit and everything. But you know, we're keeping an entry level here. So this is opening up the same sort of thing here in my, in my room here . There we go. So we're saving us some airline fare and uh , you know, and we want to give everyone that's out there on the Texas whiskey experience. They need some tools in their tool kit. So we're trying to find some entry level entry level tools to enhance their experience.

Speaker 3:

So nothing else. People need to understand some of the lingo that other people are using like floral or leather or things like that. So they can BS their way through this process is because they want to do the same. There's throw the book wherever. There you go. All right . So let's, let's talk about what we're drinking today cause we like to

Speaker 2:

okay. For your our drinks. That's right. We've got to have some Texas whiskeys on the menu here and to practice with our new kits. First up I have , so both these whiskeys are on the Northern Trek of the Texas whiskey track and we've got , uh , is it Firestone in Robertson or Robertson ? We should , we should probably figure that out. We'll take them, we'll ask them. Right. So we've got their Texas straight bourbon whiskey. It's a 90 proof. And looking at, looking at the site. Looks like the mash bill is Texas yellow dent corn and soft red winter wheat. Okay. And then also from the Northern Trek, we've got our iron root Promethian bourbon whiskey and

Speaker 3:

well that one is, I've got some [inaudible] .

Speaker 2:

You got some information on that one.

Speaker 3:

First off, I'll tell you, it was done in 70% Virgin American Oak and 30% Virgin European Oak. Okay. Mashville is 80% yellow corn, 5% purple corn, 5% bloody butcher corn, 5% Flint corn and 5% rye. So the rye should add some little bit of spiciness to it and , and tamper down on the sweetness from all their corn. But I'll tell you, it smells great

or sorry, my nose is wonderful. He knows is wonderfully. Yes. Yep .

Speaker 3:

All right , so we've got these two . So we're going to walk through some of our aromatic samples here while we, while we nose the bourbons.

Speaker 2:

So I mean the kit's pretty simple. You grab the vial that you're , you know, with whatever aroma you want to try and make your pixie stick in it and you stick your pixie stick or paper strip in there. Um, and then your kit says to let it waft for or air out for like a minute or two. We're w that's for Kentucky drinks in Texas. We want it full on your face, slap you around and then you hold your scented paper strip a few centimeters away from your nose. Close your eyes close. Yeah . Sent them , I think the aroma

Speaker 3:

Academy people are out of the UK or something, so they get the centimeters on there . They're gone on metric on us. But anyways, and then you knows , it says close your eyes and lightly begin to inhale. It sounds like you're on a hot date or something. Then I'm going to do this with my eyes open. Okay. Take a second with and make an educated hypothesis based off of once you've smelled. Okay, well we're not going to be guessing . We pulled some bottles right in vials , so we don't have to guess at what we're smelling. We can say whether or not it's close. Yeah. We went, I'm at work . We were on these sites. Some people have rattled off some flavor profiles. Yeah , let's, let's see what we got. Alright , so let's start with the TX. The, the , is it the Firestone, Robertson Robertson. Just say TX was CES . Uh , we'll start with that one. So this one on the nose, we're supposed to get some floral, all spice and cinnamon. And I, and none of these had all spice or cinnamon. Okay. They had Brown spice and Brown spice according to this is all spice and all spice includes the cinnamon. So we've got Brown spice instead of the allspice . Um, so let's, let's, let's take a look. Let's take a nose . Let's knows it. Okay. How do you add , which one are we doing again? We're doing TX. TX. Yeah . How do you get the wrong one? I got the Promethian. Oh, we'll do the to you . And you get the TX. How do we know? Is that first off, you just, I've, I've heard different things. I've, I've been a couple of different people have always said you just don't , uh, don't know. Is it hard? You're supposed to open your mouth and kind of like breathe in through your mouth so you're not over overdoing it on your senses. Got it. So, alright , I get whiskey. So we're supposed to see it yet . I get nuttiness right? Am I good or are you getting floral? All spice and cinnamon. I dunno . Let's see what these smell like. How's that? All right. Do you have a spice in yours ? Uh, cause I looked in my kit. Do you want to do basic components of what the grains first or do you want to do? Ooh, let's do that. Let's see . So we've got corn and wheat. All right . In the mashville I've got a corn and a week. Do you have corn or wheat or corn or wheat? Okay.

Speaker 1:

Speaker 3:

so we're going to dip our Pyxis too . All right . Shake it like a pull those . You're listening on iTunes. We're sticking paper strips into little vials here. It's exciting television. We're going to hold this one inch, give or take. Ooh , that smells like cool. You're not closing your eyes. Sorry. I don't, I don't trust me to be closing your eyes and I don't trust air force people with my eyes closed. Oh , here we go. Yup . All right . Oh, okay. I'm getting some of the corn. [inaudible] the smell mine . Your ears. Your sounds pretty much exactly the same. All right . Well yeah, they're made by the same company, so there you go. Boots . All right , so let's take a , getting some corn, getting corn and getting corn. Right. So you've also got a wheat, correct? I've got wheat. Did you have wheat? Wheat. All right. All right . We got wheat. So, so is this actually we did bourbon. That's what they , they say that they fall in the category of weeded bourbon. Okay . So it should be softer.

Speaker 1:

Okay .

Speaker 3:

All right . I'm wafting pixie stick with some weed on it. All right, I'm not, I get it. I was, I was thinking is going to be more like a bread, but it's not , I'm not getting a bread. No, that is, Hmm . I guess I haven't really smelled much wheat. We should have had a box of corn flakes here in corn flat B Corp. now what's the one with the , uh , uh, the frosted mini wheats. Frosted mini wheats. That's what I meant to say. Yeah. We just have him frosted mini wheats. Okay. It's grainy though. I mean it is , we get that. All right. I'm most sniff this thing knows it. Whatever. Okay. I'm getting those notes. That's good. I really , yeah, I did. And I can say that and you can't prove me wrong. Yeah. But no, I actually get a hint of that wheat as I knows that. So as I'm, as I'm sniffing things on the sticks, it's a , I'm picking up more and more of those flavors. So next we have floral. I've got a floral here. Floral. I already looked in my kit. I'm not, you don't have not tracking any floral ? No , I'll double check. So they got all the flavor , all the aromas on the lid here, and I don't have any floral going on. Pixie stick and blah, blah, blah. Here. Yeah . Danila Barossa floral. Okay. Let's see what we got. I got pretty much nothing. Oh yeah. What is this is what's , I think it should be. Water. Floral does not have much in a Roma at all. I'm not getting floral at all off this stick. You really have to. It's good . It's not , don't , alright , floral . It's a , I don't see it.

Speaker 2:

I'm not getting floral distill at all . I think that's one of those made up things to make other people stupid. You've got to really breathe in deep. I'm kidding. I do really taking in . It's a very faint, like a light perfume thing going on on the, on the solo . Nah , I'm talking talking about the TX whiskey. So I'm just saying [inaudible] your pixie stick on the pixels

Speaker 3:

driving past a meadow of, of wild flowers at 80 miles an hour. It's the what you may catch a whiff of as you're driving past Navy . Okay. It's that fate .

Speaker 2:

But are you getting that in the, in the TX? No ,

Speaker 3:

I didn't get anything. I'm not getting it, but I'm getting , what do we got next? Alright , I've got some Brown spice Brown spice that smells so good. I've got a Brown spice vile. Let's see what we got that totally, yeah, it smells. We'll do some Curry. We can do some baking with that. Maybe even like some Kumon, make some chili. Cool man. That's,

Speaker 2:

we'd go over to the floor first and this one is overpowering.

Speaker 3:

That's nice.

Speaker 2:

All right . This is way too bold though for the TX. I mean it's

Speaker 3:

okay .

Speaker 2:

Oh , so when you knows the strip and then you go to knows the whiskey does, it does, it knows different. Those is a little bit different. I think it does.

Speaker 3:

What is happening is, is, I don't know , maybe it's, it's lingering. Okay . Oh, factory senses there you think? Or it could just be highlighting the fact that, Oh, okay, now it's, Hmm. Cause I actually get a little bit of that, that spice in there now. All right . All right . Okay. Hmm . Okay. I'm digging it. You're digging it. Alright . I gotta drink. Yup . All right . All right . This is supposed to be dark fruit, sweet smile, sweet spice and caramel on the palette . What is the taste? The TX one Finnish dark fruit. Sweet spice and caramel. Okay. Okay. I get some of that. Sweet spice. I get the dark fruit. I , it's a almost like a, I hate to say this cause it's more of a wine thing but almost like a , a stone like a or a plum or something there or a dark cherry. Uh, and then the caramel is pretty obvious.

Speaker 2:

I swear I get that. Uh, maybe I poison the well cause I read the website but you know that pecan proprietary pecan

Speaker 3:

yeast that they have or whatever. I've got to pecan. You got a pecan , have a pecan cause I'm getting like a nuttiness thing going on. Okay. So let's, let's, so that for those of us , maybe it's picking up on the microphone. We've , we've got the ice cream truck apparently driving by them during this podcast we've had the ice cream truck doing a loop and now we've got, and we had the, the yard guy with the leaf blower leaf blower . So that's, that's , that's, that's going to be good radio quality there. Alright . So there's the con the con, but that's all right . This is, this is the danger of podcasting out of your home as opposed to the a , we'll get this , you know, another 10 years we'll get the standalone studio. Oh sure. That'd be on proofing. Texas talk studios. Nice. It's really faint. It is really faint . And I'm almost sad I've been drinking too much TX here, so

you got to parse them out real quick. All right . Pour some more. I get the pecan in the , in the flavor a little bit, I think too. Yeah. Yeah. It's kind of neat. I don't know if this again, I may just be suggestive,

I get it. I feel, I feel like I'm getting a hand to that. All right, let's move to the promethium . [inaudible] from Ethiopian . Promethian promethium Raytheon killing me . Iron root . Promethian all right , so this is the one and we , we kind of talked about the mashville right? Earlier. Uh , this is out of iron route . This is going to be very corn heavy, which we smelled the corn earlier, so, right . It's going to be, we're getting rain . We're going to renos count corn. Oh yeah. We need to, Reno's let's Rena is corn. So we've got, where did my corn go? Just get another pixie stick. Well I'm looking for the corn of the bottle. Okay. I don't like , like I said, I feel like I'm in a chemistry class right now. I'm a mix up, something wrong and blow up the lab. There's too much crap on the table. All right. Ooh . Big corn. Big corn corn. All right , so the nose of this is going to be strong and dry. Okay . So um, the website that I pulled these tasting notes for, I'll , I'll give them credits, the mashing.com , uh , which is pretty good tasting notes actually. Okay. Even though they may be making stuff up too, they actually recommend adding a few drops of water to calm it down and opening it in water. I don't have water.

Speaker 1:

Speaker 3:

Sorry, I shouldn't be drinking it . Hello ? Oh yeah, it's good. But I'll tell you what, you get the corn all the way through that. Oh yeah, that's delicious. All right . So let's pull out some ride . Cause again, this has 5% rye . That's going to be, I don't know if that's enough dry . I don't know thing with, but we're going to pull it out anyway . Gives me excuse to open the right bottle , Zach . All right . Or

Speaker 2:

okay.

Speaker 3:

Alright . Rye . It's stronger than the the wheat or the news . The shredded wheat. Did we hit earlier?

Speaker 2:

Hm . Okay. Okay. What else knows ?

Speaker 1:

Okay .

Speaker 2:

pick it up. Ryan there. But again, it's only 5% I imagine that's just one of those things. The distillers that, all right, we got , let's balance out this corn a little bit. Or he could've just run out of corn possibly and said, Oh, let's throw some Mariah . Hmm . All right, so it's got caramel six notes . What's the other one? Caramels. The next note. Did you get your camel

Speaker 2:

caramel? I don't think I do. All right . Let me look at my lead here. I don't think I had a caramel. I got vanilla too . Those are different flavors. Yes. Yes. I know. I don't have a caramel [inaudible]

Speaker 3:

so you can see with these two different kits, you've got some different, you got some different aromas going on so,

Speaker 2:

Oh it's like as a n***a and caramel the same thing.

Speaker 3:

No, but a lot of times combined in the same candy bar . Okay. Alright . That okay. I will say the caramel [inaudible] Promethian yeah , a little bit. I would say the caramel to me smells. I've seen a lot of reviews that talk about Bert sugar. Right as well. That caramel in that Bart cigarettes , that could probably be synonymous. Okay. Hmm . All right . Now it says Oak [inaudible] .

Speaker 1:

Okay.

Speaker 3:

I think I'm getting a little, I think I'm going a little bit that you have an Oak bottle. I don't think I have Oak either. What the hell? No way to have a 15 I didn't pull it. Alright . And I got an Oak .

Speaker 2:

Yeah .

Speaker 3:

I don't smell anything. I look now seriously. It's like the predominant, I hear they use it when they make whiskey. So it's the rumor I've heard. Yeah. This is like I'm getting nothing off the stick. All right . So I want to try something cause I've got this that I failed . How do you think this is playing out for people in podcast land? They're saying, what the hell are these places ? I can't see anything. I can't you to watch this on YouTube. I'm not sure this is going to translate in just audio. It's all right. It's going to be fun. You'll enjoy it. You really have to really have to know that is the faintest of the strips you have chartered by chance some years. Hard Oak . Yeah . That's something I found in mind.

Speaker 2:

No.

Speaker 3:

All right . Just smell that smell going on cause that's interesting. That's , I think that's a much stronger. Hmm , okay. What do you get with charter? What am I smelling right now? Yeah .

Speaker 1:

Okay .

Speaker 3:

It's kind of got a chemical smell it vanilla to it, which again you talk to, I mean you get the smokiness, but I'm getting kind of a chemical smokiness thing going on. You know , one of the things that adds that vanilla flavor to a whiskey in a new charred Oak barrel is you're going to get that vanilla flower . Now that it's lingering more. I'm getting, I'm getting more of a campfire thing going on with this. So maybe the instructions that said, let it sit for a minute. Yeah, we didn't learn that five working at a time table. They don't want to waste people's time. So, all right , so what's the verdict? You think this is a good investment for somebody? I think it's fun. I would if, unless you want to get into making a bourbon, I wouldn't do the one that has all the making a bourbon or making a like a distiller . You want to get into the distilling. Okay. I don't think you need the one that has the acetones and the heads and the tails and okay. All the nastiness. So yeah, there's a hundred dollar price point difference, right? If it's something that interests you, go with a cheaper one. I think you got enough stuff there to play with. You don't get certified, you get the book. You can be a bourbon steward. That is true of Steve and thief society. And if you actually attend the course in person, you get, they have a pen. So if you just do the course here, they send you a pen. It's only got the one thief on it. And then the actually attend the course in Kentucky. Get you , get the two crust thiefs thinkings , thieves, thieves. So fives , fives . Well , what I will say both about the TX and the , uh, the iron route . Beautiful drinking whiskey though . So, yep . I think this was kind of a flood experiment to do here. So there you go.
